Carl Brothersen is Associate Director of the Western Dairy Center.  He is responsible for the administration and daily operation of the center, conducting the cheese making short courses, and planning and conducting the Biennial Cheese Industry Conference.  His areas of research are cheese technology, and the effect of oxidation-reduction potential on the metabolism of cheese cultures.
