Biography

Janet B. Anderson is a Vice Provost at Utah State University and a Professional Practice Professor in Dietetics in the Department of Nutrition, Dietetics and Food Sciences. Her primary teaching responsibility has been in the Dietetics Programs where her graduates have achieved a near 100% pass rate on the national board examination. She has received numerous advising and teaching awards over her 24 year tenure, most notably the 2005 Robins Awards Professor of the Year and the 2006-07 USDA Food and Agriculture Sciences Excellence in Teaching Award. She is a Registered Dietitian with extensive knowledge of general nutrition, sports nutrition, life-cycle nutrition, school lunch programs and food safety. She is known in her classroom for the vivid examples, especially stories about her two sons. Her food safety research has been featured on The Today Show, Prime Time Live, Paul Harvey and National Public Radio.

Teaching Interests

Dietetics courses, including food systems and foodservice management. Nutrition courses, including basic nutrition, sports nutrition and lifecycle nutrition.

Research Interests

School lunch/child nutrition. Food safety, especially consumer food safety. Long-term care facility foodservice and nutrition. Acute care facility foodservice and nutrition.
