Research Interests

My research interests have principally involved the physiology and genetics of dairy lactic acid bacteria as they relate to the development of cheese flavor and functionality. As part of that work, my group has been heavily involved in genomic analysis of lactic acid bacteria, including genome sequencing efforts for important dairy lactic acid bacteria such as Lactobacillus helveticus and Lactobacillus casei. More recently, we have become involved in probiotics research, and in research to control Listeria monocytogenes and other bacteria pathogens in ready to eat foods.
