Teaching Interests

Undergraduate student research. Professional practice for dietetic students. Sustainability of local ingredients made into delicious foods that are used as talking points for teaching healthy food and nutrition habits. Nutrition counseling including sports nutrition, weight management, diabetes and chronic disease education.

Research Interests

Incentivizing food and exercise behavior change in schools. Impacting health behaviors through intervention. Nutrient dense foods and impact on health. Creative and effective ways to teach dietetic students. Controlled feeding trials. Skin carotenoid research.
